Vegetable Soup Recipe Video – How to Make Healthy Vegetable Soup at Home – Easy & Simple

Add 1 litre of water to a cooking pan
Add ½ carrot diced
Add cubes of one small onion, measuring about 35 grams
Add two garlic cloves diced
Add 1 tablespoon sweet corn kernels
Add a handful of chopped coriander
4 to 5 peppercorns
Add half teaspoon salt
Close the lid and cook on medium flame
When the water comes to boil, simmer for one hour
Sieve and separate the clear stock
Either discard or use the vegetables as salad
To an another pan, add one tablespoon of oil
Add one tablespoon of white spring onions, chopped
Stir fry for 30 seconds
Add 1 ½ tablespoons thinly diced carrot
1 ½ tablespoon thinly diced beans
Add one medium sized capsicum, chopped
Stir fry for one minute
Add 2 tablespoons tomato puree
Add ½ teaspoon salt
½ teaspoon white pepper powder
Mix well
Add half of the vegetable stock and preserve the remaining stock in the refrigerator for next use
Add 1 tablespoon cornflour mixed with 1/4th cup of water
Stir continuously while adding the cornflour paste
You can add ½ teaspoon white pepper powder for more spicy taste
Mix well
Switch off the flame and garnish with chopped green spring onions
Vegetable soup is ready

To another pan, add oil. 2. Add chopped white spring onions. Stir fry for 30 seconds. 3. Add thinly diced carrot, thinly diced beans and add chopped capsicum. Stir fry for one minute. 4.
